Almond Butter Cookies
A ‘healthier’ cookie option - oh so moreish!
Ingredients
1 cup Almond Butter
½ cup Coconut Flour
¼ cup Coconut Sugar
1 Large Egg (or 2 Small)
1 tsp Vanilla Essence
¼ cup Crushed Nuts of Choice
1 Slab 70% Cacao Chocolate, Broken into Small Pieces
Instructions

Preheat the oven to 180° Celsius.

Mix all the ingredients together in a mixing bowl.

Scoop mixture into a Tablespoon measure and roll into balls.

Place on a greased baking tray and flatten the balls with a glass or the back of a fork, allowing sufficient space between the biscuits for when they spread when baking. (or use a Muffin pan for perfectly shaped cookies with no spreading)

Bake the cookies for 10 – 12 minutes or until golden brown on the edges.

Remove from the oven and allow to cool completely.

Dip half of the cookie in chocolate and then into nuts and allow to cool on a drying rack.

Store in an airtight container and enjoy at leisure (if they last that long!)
