Bone Broth: Chicken
Bone Broth, often referred to as 'liquid gold' is a simple, 'waste reducing', nutritional delight packed full of collagen, anti-inflammatory amino acids and bioavailable minerals. It is prepared by slow cooking chicken bones, chicken feet, neck and other connective tissue that would ordinarily often be discarded from prime cuts of poultry. Flavoured with organic herbs, vegetables and other spices it is a powerful natural tonic with many healing compounds.
Chicken feet may seem intimidating, but they are full of broad-spectrum nutrients like chondroitin, hyaluronic acid, amino acids, glucosamine and trace minerals. This gelatinous-rich liquid is gut healing, soothes digestive trouble, and can support healthier skin and nails.
Ingredients
2 Organic Chicken carcasses (raw or cooked)
6 Chicken feet (organic, pasture raised, outer membranes removed)
2 Onions, diced
3 Sprigs fresh Thyme
3 Sprigs fresh Rosemary
3 Bay leaves
1 Coin sized round of fresh Ginger, diced
2 tsp Pink Himalayan Salt
5 l Water
¼ cup Organic Apple Cider Vinegar

Brown the chicken bones and chicken feet in a large saucepan with some butter or roast on an open tray in the oven (releases flavours) until golden brown.

Transfer to a slow cooker and add all ingredients, ensuring all the bones are submerged under water.

Allow to simmer on low for 12 - 24 hours.
Periodically remove and discard any scum that rises to the surface, with a soup ladle or spoon.
If the water level drops due to evaporation within the first 6 hours of cooking, top it up to ensure all the bones are submerged for the remainder of the cooking period.

Once cooked allow to cool, strain, discard the solid remains and portion into servings to freeze or enjoy immediately.
Store in a glass container.
