Cheesy Keto Breadsticks

These cheesy breadsticks offer a great keto, gluten free bread replacement. Ideal for dipping in soups or mopping up the sauce from a hearty casserole!

Ingredients

 1 Medium Head Organic Cauliflower, Cut Into Florets (About 6 Cups)
 ½ cup Shredded Mozzarella Cheese
 ½ cup Grated Parmesan Cheese
 ½ cup Shredded Mature Cheddar Cheese
 1 Large Free-Range Egg
 ¼ cup Chopped Fresh Basil
 ¼ cup Chopped Fresh Parsley
 1 Garlic Clove, Minced
 1 tsp Salt
 ½ tsp Pepper

Instructions

Preheat the oven to 220°C.

Divide the cauliflower and process it in a food processor until finely ground.

Place the processed cauliflower into a glass bowl and microwave for about 5 minutes on high, until tender.

When the cauliflower has cooled, wrap it in a clean kitchen towel/ muslin cloth and wring it out, draining all liquid.

Return the dry, crumbly cauliflower to the bowl.

In a separate bowl, mix the cheeses together. Divide the cheese, adding half of it to the cauliflower, setting aside the remainder.

Combine the balance of the ingredients and stir into the cauliflower mixture.

Line a greased baking sheet with parchment paper. Shape the cauliflower mixture into a 30cm x 20cm rectangle on the baking sheet.

Bake for about 20 minutes or until the edges are golden brown.

Remove from the oven and top with the remaining cheese mixture.
Return to the oven and bake again for about 10 minutes until the cheese is melted and bubbling.

Remove from the oven and cut into 12 breadstick-shaped fingers.

Serve with a hearty Casserole or Keto Thai Chicken Soup
