Decadent Creamy Coconut Smoothie
This refreshing, paleo and keto coconut-cream smoothie can double up as a breakfast meal or as dessert!
Ingredients
1 Large, ripe avocado (or 2 smaller ones)
½ cup Organic coconut yoghurt (or 1/2 cup coconut cream if you can't find yoghurt)
2 Scoops collagen powder
1 tsp Vanilla extract
1 cup Water
A big handful or 2 of ice
1 Coin size knob of fresh ginger, ground
¼ tsp Stevia leaf powder to bring to sweet taste
Variations to add: cinnamon, maca powder, chia seeds, raw cacao powder
Instructions

Add all ingredients to a high power blender and blend until smooth and creamy.

Taste and add more stevia if you require a sweeter flavour. Blend again.

Pour into 2 glasses and garnish with raw cacao nibs.
Serve and enjoy!
