Festive Jolly Jammer Thumbprint Cookies

Who remembers Jolly Jammers? The smiling, moreish jelly filled biscuit treats?! Whether you’re celebrating Christmas or just the holidays, these festive keto cookies are scrumptious, fun for the kids to make and will be devoured by the whole family

Ingredients

 2 ½ cups Almond Flour
 ½ tsp Baking Soda⁠
 ¼ tsp Sea Salt
 ½ tsp Ground Cardamom
 ¼ cup Organic Maple Syrup
 1 tsp Vanilla Extract
 1 tbsp Gelatin Powder
 3 tbsp Hot Water
 Unsweetened or Fruit Sweetened Fruit Preserves or Jam

Instructions

Preparation

Preheat oven to 180 degrees Celsius
Combine the dry ingredients in a medium bowl.
(Variation: Replace cardamom with 1 Tbs of Cocao for chocolate biscuits)

Wet Ingredients Preparation

Heat 3 tablespoons of water in a small saucepan.
Once it begins to steam, sprinkle gelatin powder over the top and Turn off the heat.

Allow gelatin to sit and expand. Then whisk briskly until foamy and dissolved.

Add coconut oil, maple syrup, and vanilla extract to gelatin and whisk to combine.

Add wet ingredients to dry ingredients and mix thoroughly, until dough forms.⁠

Baking

Line a cookie sheet or greased baking tray with parchment paper.

Roll a small amount of dough in your hands to make a truffle-sized balls with the dough and place on cookie sheet.

Use your thumb to create a shallow well in the center of each dough ball and fill with ½ teaspoon of unsweetened fruit preserves or jam

Bake for 8-12 minutes, until edges are golden. Allow to cool slightly and enjoy!⁠
