Harissa Paste
This North African delicacy, custom to Tunisia, is a great spread, dip or additive to marinades, stews and bredies. Or can be enjoyed with a veggie platter. It also makes a great homemade gift to the host at a dinner party!
Ingredients
1 tsp Caraway Seeds
1 tsp Cumin Seeds
1 tsp Coriander Seeds
5 tbsp Dried Chilli Flakes / Homegrown Chilli
3 Garlic Cloves, Peeled
1 tbsp Smoked Paprika
1 tbsp Sun Dried Tomatoes
60 g Olive Oil
Pink Himalayan Salt, to taste
Optional / Variation: 4 olives or 1 tsp of olive tapenade
Instructions

Dry roast the caraway, cumin and coriander seeds in a frying pan. Allow to cool.

Place the cooled mixture in a food processor and blend until fine.

Add the remaining ingredients and process, stopping to spoon scrape the mixture from the sides of the bowl intermittently. Adjust seasoning and blend until smooth.

Store in a sterilized glass jar in the refrigerator.
