Honey Fermented Garlic
Delicious honey-fermented garlic is the easiest fermentable food there is to make! Once you get this batch going, you can keep it going forever, simply by adding more of either ingredient. It’s
also a great way to preserve a bumper crop of garlic.

Ingredients
1 ½ cups Raw Honey (Pasteurised honey will not ferment)
1 Sterilised Pint (500ml) Jar with lid
½ Jar Garlic Heads
Instructions
1
Sterilise your jar by submerging it in boiling water for 5 minutes
2
Peel the garlic, making sure you remove any of the papery skin and any brown spots
3
Half fill your jar with garlic cloves
4
Cover with raw honey. Seal tightly and give it a little shake
5
Place your jar in a warm spot
6
Check your jar every day and open the lid to "burp" the gas
7
Allow a week for the best flavour to develop
8
The honey will thin out, and the garlic will begin to turn gold in colour as it soaks up the honey. Add honey or individual cloves to the jar as needed.
