Keto Cauliflower Chocolate Pudding
Dessert can be a lot less guilt-ridden if its made with vegetables and is low carb! This pudding is super delicious, very tasty and easy to make!
Ingredients
1 Large head of organic cauliflower
¼ cup Raw cacao, unsweetened
1 ½ tsp Gelatin
1 tsp Sweet leaf stevia powder (add more to individual taste)
½ cup Heavy cream, raw and organic
Instructions

Steam cauliflower until soft.
(save the steamed, 'distilled' water remains for stock or soup base- full of discarded nutrients!)

In a high speed blender or food processor, puree the cauliflower.

Whilst the cauliflower is still warm, puree in the gelatin, cocoa and stevia.

Add in the heavy cream and puree until silky smooth.

Pour into 4 individual ramekin pots and refrigerate for at least 3 hours.

Serve cold from the fridge either as is, or garnished with fresh berries and a dollop of cream.
Note: This mixture works brilliantly as a frosting too!
