Low Carb Bacon Cheddar Fritters

No need to feel deprived of a starchy side dish! These fritters are a tasty ‘carb’ addition to any meat dish or even served as a snack with sour cream, melted feta or cream cheese!

Ingredients

 5 cups Gem squash or Butternut, Grated (squash has a lower carb count)
 1 cup Mature Cheddar Cheese, Grated
 5 Slices Bacon, Cooked and Cut Into Pieces (Reserve Bacon Fat)
 3 Eggs
 1 tsp Himalayan Pink Salt
 1 tsp Coarsely Ground Black Pepper
 1 tsp Fresh Chopped Chives (plus Any Fresh Herbs to Your Taste)
 Sour Cream, Cream Cheese or Feta for serving (optional)

Instructions

Grate the raw squash (ideal is to use a food processor) and transfer it to a glass bowl

Microwave or steam the squash for 2-3 minutes until just cooked

Add the grated cheese and bacon bits to the squash mixture and stir

In a separate bowl whisk the eggs, salt, black pepper and chives/ herbs together

Stir into the squash mixture and divide up into 20 portions

Heat the bacon fat in a frying pan and flatten the divided mixture into ‘patties’ just before adding to the pan

Fry over a medium heat, turning until golden brown on each side. Transfer the cooked fritters to a paper towel whilst cooking the remainder of the patties.

Serve hot as a side to a meat dish or top with feta and grill to serve as a canape. Also delicious as an afternoon snack served with cream cheese.
