Low Carb Cauliflower Macaroni & Cheese

Mac 'n Cheese takes on a new disguise with this low carb, keto cauliflower recipe. It leaves one feeling much lighter after eating it, plus you're assured of your veggie and fibre intake whilst remaining in ketosis!

Ingredients

 5 cups Cauliflower florets (organic if possible)
 1 cup Coconut milk, organic
 ½ cup Home made broth
 2 tbsp Coconut flour, sifted
 1 Free range egg
 2 cups Cheddar cheese, preferably organic, grass fed
 Salt (Himalayan) and pepper to taste

Instructions

Pre heat the oven to 180 degrees Celcius.

Salt the cauliflower and steam until al dente.

Place the florets in a greased baking dish.

In a skillet, heat up the coconut milk with a pinch of salt and pepper over a medium heat.

Add the broth and keep stirring.

Sprinkle the coconut flour over the mixture and stir to avoid lumps. Let the sauce bubble.

Variation: if you enjoy a herbed mac 'n cheese, add in fresh or dried herbs.

Remove the sauce from the heat and whisk the egg in.

The sauce should thicken with the egg. Once it is a little thicker, pour it over the cauliflower.

Sprinkle the cheese on top evenly and place in the oven to bake for 35 - 40 minutes.

3 - 4 minutes before removing from the oven, turn the dial to grill/ broil to brown the top.

Remove from the oven and serve with a green salad.

Allow to cool and garnish with fresh rocket.

Serve at room temperature with a side green salad.
