
Low Carb Meat Loaf

Preheat oven to 200°C
Grease a medium loaf tin with butter
Add the olive oil to a saucepan and heat at a medium temperature
Add the onion and celery and cook until soft (approximately 5 minutes)
Add the garlic, oregano, and chili powder and cook until fragrant (approximately 1 minute)
In a large mixing bowl, combine the ground beef, sautéed onion mixture, cheese, almond flour, parmesan, eggs, soy sauce and season with salt and pepper
Line the loaf tin with 1 packet of the strip bacon overlapping each piece in a lattice frame
Add the meat mixture to the tin and lay the balance of the bacon slices on top (you may have left over which you can crisp and use as decoration for serving)
Bake in the oven for about 1 hour. If the bacon is browning too quickly, cover the loaf tin with foil
Remove from the oven and turn out onto a serving board.
Slice with a sharp knife and serve with veggies or salad
