Walnut and Cauliflower Harissa Dip

This North African delicacy, custom to Tunisia, is a great spread, dip or additive to marinades, stews and bredies. It also makes a great homemade gift to the host at a dinner party!
Ingredients
400 g Cauliflower Florets
2 Garlic Cloves, Unpeeled
455 g Olive Oil
1 Lemon, Large - Juice Only
1 tbsp Paprika
10 g Tomato Paste
130 g Walnuts
Salt and Pepper to Taste
Instructions

Preheat the oven to 200°C.

Spread the cauliflower florets and garlic cloves on a baking sheet and drizzle with 1 tbsp of olive oil, tossing well.

Roast for 20 minutes. Remove from the oven and leave to cool.

Squeeze the garlic out of the skin.

Place all ingredients into a food processor and blend, scraping down the sides of the mixing bowl intermittently.

Repeat until the desired smoothness of consistency has been achieved.
